Chicken Piccata


This is the best Chicken Piccata recipe. It is from the Food Network's Everyday Italian with Gianda DI Laurantiis. It is so simple and makes a great quick weeknight dinner in no time.
I love the melding of flavors, it is just enough citris to liven up the chicken broth with a little tang from the capers. It is one of my favorite 'Go To' recipes. Give it a try. You'll be gald you did!

openeing the cocoa crispies
and pouring into a bowl

then add milk

ready to eat!

Try her Chicken Parm. The hardest part is pounding the cutlets (if you don't have a mallet, you can use a cast iron skillet). Really good and not high fat either.

I have tried the Chicken Parm and your right it is good and I love that fact that it has a lot less fat than the tradional recipe.

One of my favorite things to make, which for some reason is a comfort food to me, is an egg (mostly white) omlette with some kind of veggie in it! Really quick and healthy.

That looks good. When I made Chicken Piccata, it was delicious but it was more work than I wanted to do after after working all day (juicing lemons, mincing garlic, grating cheese, pounding chicken). This looks much simpler.

Lately, I've been enjoying marinating different meats all day and then grilling them after work. It doesn't get much simpler than that.
