Still Emptying Out My Freezer!

From Freezer Leftovers to Pizza Extraordinaire!

I didn't feel like cooking a big meal this weekend and knowing how much food I had in the freezer, I decided to create something from freezer stragglers.

What I found:
Homemade pre-baked focaccio
Homemade pesto
Shredded mozzarella
Store bought cooked rotisserie half chicken breast

What does it all add up to? White Pizza with Chicken! What more would I need? I know. Fresh tomato and basil from the garden and olive oil.

White Pizza with Chicken

Preheat oven to 450 degrees.
Spread pesto on the foccacia and drizzle with olive oil. Cover with shredded mozzarella. Shred chicken and add the pieces on top. Thinly slice the tomato and arrange on top along with a few basil leaves. Sprinkle with Italian seasoning, salt & pepper, a little more olive oil and bake for 10-12 minutes.

This pizza was really tasty and satisfying. I don't normally have chicken on my pizza, but in this case it was a great addition. It gave the pizza more substance and it worked really well with the pesto.

How full is your freezer? Sadly desolate or busting at the seams?

    wow - it's amazing what delights can come out of a freezer!

    My freezer is pretty full - but mostly with alcohol, nuts, and frozen meals. Not exactly the makings of a delicious pizza! :)

  3. I had pizza last night too! My roommate and I had a couple of friends over and I made a chicken pizza on my dad's pizza crust. It was good food and very good fun visiting! We all took a break from studying...I think we needed it!

  4. Our freezer is average - we've had to break the "stock up" habits we learned from Ryan's parents. Their fridge and freezer usually were packed to the gills and you couldn't find anything.

    We took that mentality with us, but realized we wasted a lot. Now we plan our meals and buy fresh and local, so we're not too stocked anymore!!

  7. my freezer is bearly stocked as it needs to be that way during hurricane season. That was a lesson learned several years ago. Hate throwing away food. So I guess I would be sadly desolate but with good reason.

    WWM, You're probably better off,I hate when mine gets overloaded.

    Claire, Pizza is always a great "take a break" food, isn't it? It just makes everyting seem ok!

    Crystal, I got that same mentality from my parents. I would much rather buy fresh daily too, but time is always an issue.

    Brilyn, I've always wanted to do that, but never seem to find the time. Great idea though!

    Bambola, That's all it takes, a few good ingredients and a little imagination!

    Doodles, I don't blame you. That would probably stop my from hoarding so much away.
